Stainless Conical "Wine" Fermenter????

Has anyone out there fermented their wine in a stainless conical? I purchased a 14 gallon SS Conical (Fermenator, sorry BBB) to ferment beer in, but my interests have turned to making mead/wine. I've made a couple of 5 gallon batches, but I'm interested in doing 10 gallons or more at a time due to the long wait for mead/wine to mature. Would my stainless conical work for that purpose? Can I dump the yeast after primary ferment in lieu of racking as I would in a beer ferment??? Do I need to replace my gasket to eliminate beer influence in my wine ferment?? Any other pointers/ideas would be appreciated.

Yes.
Yes.
Not necessary but a small price to pay for your peace of mind.

One concern would be the oak chips in some wine kits possibly clogging the yeast dump valve.
