I'm brand new to this site. I've been brewing beer for a while, and a couple of years ago I made my own wine from my own grapes, both Concord and Niagara. The Concord wasn't half bad after 18 months. The Niagara (which I carbonated like I would beer) turned out fine - except for that - you know - musky flavor common to American grapes. Does anyone have a good Niagara recipe? Or, does anyone have a good combination recipe (like Niagara/Apple), or, is there a spice combination that might "mask the musk" so to speak? Any suggestions would be fantastic.
