Discussion on the ingredients for making wine.

Hello all. I've been making wine for a while now and am getting ready to make some wine using some Concord Grape juice I have located (I work in the food service industry, so sometimes I can find unique/interesting products to work with).
My question is about yeast...In particular, I am seeking input on what yeast to use to have a final product with a moderate residual sugar content. Any help or suggestions would be greatly appreciated !!!

Our descriptors are pretty good as to what you can expect form these yeasts, and many are strains that you can't find anywhere else in small packs. Sorry this wa so late ... how did the wine turn out?
