Whiskey Barrel

Postby CA_Mouse » Sun Oct 18, 2015 3:37 pm

Okay, I finally ordered a barrel from Woodinville Whiskey Company. They are the ones that advertise on the AHA website and Zymurgy magazine. 15% off through the end of the month was more than I could stand. Emailed them to get an estimate of the next shipping date, they responded within 20 minutes and told me that my barrel will be dumped on November 2nd and shipped within 24 hours.

Now my thoughts... I will eventually be doing sours in this barrel, but it is still going to need a few batches run through it to pull the whiskey from the oak. I'm going to do an Oatmeal Stout tomorrow that should be ready to transfer into the barrel the day it arrives. I've read 2 weeks for this first beer is all it takes, then a month for the second one.

I just did a Red IIPA, a Belgian Blonde and a Porter. Suggestions for the second beer going into the barrel? I was thinking an Amber might be nice...

That is why I'm doing the Stout, I don't want 2 Porters on tap. I'm leaning more towards a hoppy Amber or copper colored IPA.

How big are the barrels?. I have done two barrel group brews and both have gotten infected each time. The first one the barrel was in my basement and the problem was we did not fill al the way up. the second was in another club members basement don't know what went wrong there.

I decided to do a Foreign Extra Stout. I've been told that I may pull quite a bit of the color from the char for at least 3 or 4 beers, so I will most likely do a light colored Amber as the second beer and then a coper colored IPA as the third one. At that point I can decide if it is ready for a blonde ale that will be soured after the barrel and possibly introduce bugs into it on the fifth beer.

Thank for the tip on this. I ordered one that's getting emptied on 11/20 and should be in my hands by Turkey Day.

Just got my shipping info. My barrel is due to arrive on Wednesday! I will definitely buy another from them when this first one is turned into a sour barrel.

WingStall did you order a bourbon barrel or a rye barrel? I think I will order a rye for my next one, that way I have a bit of difference between the two.

I assumed bourbon, as I didn't realize there was an option between bourbon and rye. I need to follow up to make sure.

I'm going to occupy the barrel with something else for a while (~55% abv) prior to putting beer in it that traditionally uses a bourbon barrel.

Its not an option, it is all dependent on what they are dumping in the next round.

Got mine last week and got too busy with family emergencies. It smells incredible with the fresh bourbon and oak. Filling it today with my Oatmeal Foreign Extra Stout and looking forward to what I'll get from it.
