Solid American Wheat recipe

Postby BrewBum » Wed Jun 05, 2013 6:19 am

Anyone have a solid American Wheat recipe?

I haven't done Jamil's so that is my backup but I thought I would ask on here. I have to make this for someone else that doesn't like "dark" beer and normally drinks bud light or boulevard Wheat. So I told him I would make something similar like boulevard that I know he will bastardize with a lemon.

Oh well. If you have a decent recipe though, I might make 10gls so that my wife and I can have some for the Summer months.

Nate, you ever have Bells Oberon? I am not a huge wheat fan but I loves me some Oberon. I think I have a pretty good clone that I have used various hops in depending on what I have on hand...a very forgiving recipe. Long story but I don't have access to computer with proMash on it, but I'll get it for you tomorrow if you like. Guaranteed can't miss.

I have, been awhile though, isn't it more of a wit type wheat? I remember it having a little more esters and flavors than a standard american wheat. I may be mistaken though.

What do you ferment it at?

I like the pils/wheat combo, make for a lighter grainer beer.

Hmmm, don't see ferment temps in my notes....I'd say 65-68 as that is my stand by.

Agreed with WLP001/1056/US-05 just shoot for 65-68. If you're using one of the wit yeasts then your temp is going to play a far more crucial role in the flavors of the beer. Not a big fan of wheat beers myself but a pretty simple recipe is:

50% wheat
50% pils
Mash at 152
OG target of 1.05
Saaz hops at 60 minutes to ~25IBU's
Wyeast 3333 fermented at ~67-68. If you want to use a yeast with tons of ester production try Wyeast 3068.
