Pickled Jalapenos

I have more jalapenos than I do tomatoes.

Anybody have a good recipe for pickled jalapenos??

I suppose the alternative is roasting and canning.... adobo sauce recipe, anyone?

Ok, it's not fermented but:


1 Cup of Kosher Salt to 2 Quarts of Hot Water
~6 cloves of garlic
Pickling spices of choice
(I'm going with a bit of black pepper, fresh oregano, coriander, and cumin)
Enough Jalapenos to pack the jar full

Pour brine over the peppers, refrigerate.
