red wine vinegar

Wasn't sure which Topic to place this -

Any of you making your own Red Wine Vinegar? Started using it quite a bit in salad dressings, on vegetables, etc and got to thinking that I should make my own with some of my homemade red wine.

Been looking at on-line resources. Just curious if any of you had any personal experience and a good source for the "mother"

Started my batch today.

Ingredients:
one bottle of homemade Red Zinfandel
one bottle Braggs Apple Cider Vinegar - has the mother
about 8 oz of water to cut the alcohol a bit
Poured all in wide mouth jar, covered with double layer of cheesecloth to allow air to circulate
Now wait...... will keep you updated because I know all of you are sitting on the edge of your seat with anticipation....

Update - at least it smells like vinegar.

Actually, this is great, Took! :) Before this, I've only made wine vinegar "accidentally"!!! Haha! :lol: I've already printed this out.

Update:

A slight ring of the mother is forming with a wonderful vinegar smell.

I decided to transfer it all to a gallon glass jar with a spigot so it would be easier to transfer the finished vinegar without disturbing the mother later.

I also added another bottle of Red Zin.

About a month since this was started and wanted to give an update -

I poured about 1/2 of a shot glass out of the spigot (this is what makes the glass jar with spigot so nice - easy to sample).
Tasted and am blown away at how good this is! Not sure what I was expecting but this is rich, complex, sharp, tart and wonderful!

Thinking about bottling in the next few days and then adding another bottle of red to start another.

Congrats!
I did this back in the late 80's and I got a lot of mother growth and not a lot of strength of the vinegar. Maybe I'll try again

Collected my first 750ml. Very happy with the results.
Added another bottle of Red Zin back into the Mother to start the process again, also added about a cup of water to bring the ABV down in the mix.

Vinegar making is still rocking. Getting 750ml back about every 5 to 6 weeks. Best vinegar ever!

Because inquiring minds want to know....

Red wine vinegar project still going strong. Pulled off about 1.5L this past weekend. I decided to pasteurize this batch by putting on the stove at 150F for about 30 mins. Bottled. Turned out nice!
(and you all need something to do with all those old liquor bottles)

Also, started using in a great salad dressing:
I did this by looking at it for consistency and by taste; so no real measurements; but if I had to guess:
Approximately:
1/4 cup of red wine vinegar
1/2 cup of olive oil - I had some Basil olive oil on hand; so I used this - drizzled in while whisking
squirt of dijon mustard (ended up going back and adding another shot later)
dash of salt and pepper
shot of local honey - just to add a touch of sweetness

This may be the best salad dressing I have ever made. We ate it all so went back and made some more and then my daughter took that home with her. :D
