I really like a good white stilton. After the new year I'm going to start making some mold cheeses like brie and blue. I have a book that has an interesting looking recipe for Gouda that's inoculated with Roqueforte.

Anyone else like Cotswolt?

A couple of years ago I botched up both a blue, and a Cheddar cheese. It was fascinating though, but a bummer to have to wait so long to get results. I haven't tried making cheese since.

I'm lucky enough to be acquaintances with a local dairy farmer who will sell me milk right out of the cow. :)

Favorite Blue:
1st - Roaring 40's blue cheese
2nd - Shropshire Blue

Gouda
Anything 3 years or older and hard enough to bludgeon someone to death with

Cheddar
black diamond Irish cheddar

Fresh Cheese
Chevre (there is no better breakfast than crackers, fresh home made chevre, and hot pepper jelly)

oh, so many...

aged cheddars...smoked gouda...but i may have to say...

spanish sheep's milk manchego with a nice wine.

whoever said aged provolone, i have some in the fridge...i'll have to grab some olives and have a snack when i get home...

Ste. Maure Chevre from my wife's village in France. Fresh and soft or aged and dry, it just can't be beat .

I'm partial to Feta. I had some a few years ago on a pizza in a cafe on one of the Greek isles. I still remember that meal...

I guess what they say is true...in New Orleans we go out to eat and talk about all of the other great meals we have had...

Cabot's - All of 'em...and they make a habenero jack cheese that is awesome
Parmigiano Reggiano - Aged and almost at room temp.
