Happy almost New Year! I will be laying low at the house, grilling, and sampling a few of my home brews. Will shoot some fireworks that were brought across the border from South Carolina and watch the ball drop on TV and in bed by 1202a.

Snow, sleet here; but not getting the 9" that they called for does NOT suck.
Predicted lows of "0" degrees on Sunday nite does suck. When it gets down to nothing, that is cold!

Not getting enough time with fellow brewers. We need more time to share some good recipes and enjoy what it is to be a brewer.

Tapped my Sweet Stout keg (made from B3"s AG kit), and I am a little disappointed. I hit all my numbers and the fermentation was smooth. I did use S-04 rather than my typical US-05; so not sure if that was the issue.

Anyway, it has a strong, bitter finish to it; like when you chew on black patent. Not like a Sweet Stout at all Hoping it will settle down after aging. Will see.

Have not used S-04 in a long, long time; but not ready to blame it on the yeast yet.
Enjoy the little things, for one day you may look back and realize they were the big things.

I've done the basic recipe several times, always using WLP001 or US-05, and never experienced a bitter bite like chewing on Black Patent. I've aged in bottles and carbed and drank from the keg without aging. Perhaps your BP was a little old?

I'd be interested in seeing if it ages out. I have only used S-04 once and I know that they claim it brings the malt forward, perhaps S-04 would require dropping the BP from 1# to 12 oz? You might need to increase the base malt a little to compensate...

Well, watching the Super Bowl last night and decided to mix my IPA with that Sweet Stout. Half and half and turns out it makes a fine and tasty "Black and Tan". That's one way to drink it. :D

It was 71F when I got in my car this afternoon. No suckage there!
Makes me want to lose some golf balls.

I was able to get in 2 rounds in January. Looks like it will be 65 on Sunday to chase the little ball around.
