eisbock - time for keg in freezer?

Postby krizwit » Sat Nov 06, 2010 11:12 am

I have about 4.5g in a corny that I am trying to partially freeze. The beer was around 38 deg prior to putting in the freezer. Roughly how long will it take so that I freeze like 20% of it? So far I have had the corny in the freezer for like 2 and a half hours and I dont hear any ice crystals when gently rocking the keg back and forth.

What alc. % are you looking for? Here's a table of alcohol-water freezing temps. http://www.engineeringtoolbox.com/ethan ... d_989.html
I have a doppelbock conditioning now that I will freeze half.
I am going to try to set the freezer at the temperature of the alcohol % that I want, then transfer from the bottom of the corny to another.

I only got about 3/4 of a gallon with 3.5 hours in the freezer. Next time I will try 4-4.5.

For my first eisbock I left it in a keg in the freezer for 7 hrs. I used my autosiphon to transfer the liquid to another keg. I dumped out the ice slush and let it thaw. I measured the volume and it was 1 gallon! I started with 5 gallons and was left with 4 gallons of liquid heaven! :D
