My first batch of Sake

Postby Chef James » Fri Sep 15, 2006 12:37 am

I purchased two sake kits (makes little less than 1 gallon) a while back and tasted it for the first time today. I ate some of the rice you filter and caught wind of a nice mild head change. Pretty amazing stuff considering it still has to age for 2-3 weeks. I am a huge sake fan and it was surprising how easy I could brew my own. I am aging it separately in 10oz bottles and experimenting with some flavor combinations: tangerine peel and coriander, star anise, berry extracts, eggnog, yada yada!!! So next time I will only make the ones that taste good... I figure it will make the perfect Christmas gift for my friends; cheap, original, useful
