Bulk aging/storing beer

Postby Mattheus_Rex » Wed Mar 22, 2017 7:25 am

Anyone ever bulk age or bulk store beer? So I made an English Old Ale. It was really finished about 2-3 weeks ago, but because of my schedule I've just been too busy and haven't gotten around to bottling it. I'm sure it's ok, but is it possible that it might pick up odd flavors from sitting on the yeast cake so long?

I would not worry about 2-3 weeks at all. I had a batch that took me 4 weeks to get to and it did not bother it.
I never rack off the yeast cake for 2 weeks on any batch.
Enjoy the little things, for one day you may look back and realize they were the big things.

Well, maybe I should clarify, it's been on the yeast cake for about 5 weeks. Like I said, I'm sure it's fine to drink, just worried about off flavors.

I still think it will be fine. I seem to recall (but do not remember where) a conversation between Jamil Z and John P that discussed at our home-brew level that extended yeast cake exposure is not that big of a deal.

With that, I would probably seek to get it racked after 5 weeks - why take chances. Let us know once you taste it.
