Malolactica with 18 mg/l

Malolactica with 18 mg/l

Hi all,

I am new to the forum. I live very far away from California (Spain) but
was there three weeks ago and enjoyed the MoreWine
stores.

I brought with me Lallemand VP31 malolactic bacteria for inducing
ML fermentation in my wine (Syrah, 25 gallons). The parameters
are ph 3.7, Total Acidity 6.7 gr/l, Volatile 0.28 gr/l and free SO2 18 mg/l.
This last number is on the high side for ML fermentation. I have with
me Acti-ML and Opti Malo Plus that I bought at the stores too.

My question is would you inoculate the VP31 with the various nutrients
having free SO2 at 18 mg/l or is it too high?

by the way, 18 mg/l is 18 ppm. Just in case.
