Sweet onion wine

I am going to try my luck at a gallon sweet onion wine. my SG is 1.060 ,Ph 4.6, not sure if I need to add Acid blend or let it stay as is. any imput from any one is welcome. I have never made this wine before.the taste so far is very sweet and mild.

1 1lb sweet red valdalia onion
1/2 lb carrots
2lbs sugar
1 lb golden raisins
1 campden tablet chrushed
1/2 tsp pectic enzyme
1 pk yeast (i used kc 1122)
slice onion into thin pieces,same with the carrots,1qt water in pan,bring to simmer for 45- 60 min.stiring and pushing down onoins and carrots, put chopped raisins in a bowl of hot water for 15min mashing and stirring.set both onions ,carrot mix and raisins aset to cool,mean while boil sugar in remaining water to make one gal .let cool place onion,carrot mix and raisin in a nylon straining bag,squeeze all juice out of bag into primary container,discard pulp,add the boiled water to primary,when room temp add dissolved campden tablets cover,wait 12hrs.add pectic enzyme stir recover,12 hrs.add active yeast, stir daily for 10 days,rack into secondary,air lock,rack every 30 days until no sediment apears in secondary,stabilize,taste for sweetness,wait 10days ,bottle,wait 6mo. before drinking.

onion wine is clearing nicely,racked,3/4/12, taste is very good so far.

One of the best wines. Especcialy with some spices
