Help with Dean Larson SN Celebration ale & color

Im going to brew Deal Larsons SNCA. I just brewed a batch of extract and used crystal malt (American) The colorm is not redish at all. The receipe I have is:

Sierra Nevada Celebration Ale



12# Domestic 2 Row Malt
1# English Crystal Malt 45-50L

1 oz Chinook 60 min
0.25 oz Chinook 30 min
1 oz Cascade flameout
0.5 oz Cascade dry hop
0.5 oz Centennial dry hop
0.5 tsp Irish Moss, 15 minutes

Wyeast 1056

1. Is this for sure Dean Larsons receipe? I've heard raves about it and want to make sure before I brew.

2. This receipe calls for 1# of English Crystal Malt 45-50L ... I used American crystal and didn't get the red color & it was a lower lovebond... the only malt I can get easily is CaraStan 30-37L how would this be in the receipe and should I put more than a pound in? I also thought about adding a little CaraRed just for color... I can't get that locally either but I can order it next time from Morebeer I really dont really want to modify the receipe until I brew it once but can't get the 45-50L I can get the CaraStan30-37L locally

Yep, that's the recipe...I've got it on tap right now! I use 1 lb. of crystal 60 and get a great orange/red color. Don't use more crystal just to get the color...that'll also change the flavor. You could maybe try 1 oz. of roast barley or carafa to get a bit of red/orange color without flavor.

That recipe sure does look tasty. I whish I had seen it before weighing out the ingredients for my Golden Glacier I.P.A. I would have brewed it instead, but then again I am off on Monday, and have all of those ingredients here in house, so......... 8)

I'm still looking for suggestions on what to do on the English Crystal Malt 45-50L below. I would really like to brew as is but I cant find any...
Will American crystal 60L do the red thing or just dark amber?

thanks for the reply, I thought about that but have been told the EnglishCrystal is completely different. I do not have enough experience to agree or disagree. Will the same amount of american 40L/60L give that nice RED color? I'm told no, just a dark amber. I made a batch already with American crystal and it came out I would say med. amber.

I've tweaked receipes for the last 3 years, I don't think I followed one to the letter.. So I have been trying to make the brew EXactly as the receipe... Especially the receipes that everyone raves about. I have some carastan 30-37L. Thats the closest I can get I guess that will have to do.

Ron, Northern Brewer has English crystal malt.

Simpsons Medium Crystal. 50-60? L. A good general-purpose crystal malt. Medium crystal malt will impart a moderate color and caramel flavor to your beer. The grain will add a sweet malt flavor, increase foam stability and give a gold to red color to ale or lager.

I picked up a sixer tonight to try this before I comitted to making a full 5.5 gallons. If the above recipe makes a beer that tastes like the one from Chico, then I might make two 5.5 gallon batches. :P 8)

I have both British 45L & 55L, so I was planning on 45L first and maybe next time hitting with the 55L. 8)

I just pitched the yeast in my batch. I upped the grain and hops both. I used 14 lb Briess 2 row, 1.25 of Simpson's crystal 55L 1.25 oz of Chinook @60, .5 oz chinook @30. My Chinook's were only 10 AA so I figured with upping the gravity I should add more bitterness. My OG was 1.071. 8)

If I wanted to do this as an extract how much LME ultralight would I need to replace the 2 row? I love the SN Celebration Ale and would like to try this recipe.

I just tapped my keg of my recipe based on the above recipe and it is beyond awsome. Here is my modified version. 8)
